OK I am a newbie but check out the Facebook posting of a video that I shot last October of Vashon Island's Ron Irvine talking about the importance of acid in wine. For a lot of reasons, Ron Irvine is my guru in the wine world. Why you ask...well, he's an author of the breakthrough "The Wine Project" with Walter Clore as the co-author. He's also a rare bird in that he produces excellent wines from Columbia Valley's Bordeaux and Rhone grape varieties as well as producing cool climate varietals from grapes grown in Washington's Puget Sound. Multi-talented and a great wit to boot. That's Ron Irvine. Enjoy the video.
